Had some friends over last night and we had pot luck mexican food for dinner, which means I have lots of leftovers. Used already cooked bell peppers, onions and a leftover baked potato from Wednesday. Nuked the potato to get it hot then browned it and the peppers onions in some bacon grease. Added nine scrambled eggs and turned heat down to med low. Did not stir, just let it set up, sprinkled a few diced tomatoes in then finished under the broiler and added some cheese towards the end. Beans and tortillas leftover also.

Thanks. Honestly, I like everything just scrambled up and it all tastes about the same. Have a house full of women though and they like their food cute sometimes.
