Got some new rub to try out. Thinking St Louis cut spare ribs. I like to slather with mustard and rub well. No 3-2-1, 2-2-1 or any of that crap. I don't wrap and I pull them BEFORE they are fall off the bone.

I don't do the traditional math equation either on ribs, 275° for about 3 hours then maybe an hour wrapped in butcher paper, I am bite off the bone guy vs. fall off the bone like a roast.

Seems like almost all I find these days are the St. Louis cut.

Your not going to Sous Vide it are ya?.... I think I know the answer to that already roflmao

Sometimes I cook them open the whole time sometimes I wrap them. Wrapping them I don't have to pay much attention to the fire and still get a great result. I must be getting boring, all I put on dang near any bbq anymore is course black pepper and kosher salt and sometimes garlic.

I'm with ya redchevy ... but usually do use onion powder with black pepper and sea salt ... occasionally garlic.

Electric smoker. No wrap. I used to wrap, but I like a tug, not falling off the bone. Fruit wood works great.

I did some this weekend with Grub Rub. Pretty dang tasty. 2 hrs smoke, 2 hrs wrapped in foil at about 275. pecan wood

I always do the whole rack, eat them for a couple of days then freeze them. I actually get six meals out of a rack of ribs.

Just picked up 6 racks of St Louis spares at Kroger $1.67/lbs. Going to do some rib practice tomorrow. I've never wrapped but I'm going to try it on one or two just to see the results.
