I’m taking my dad on a axis hunt for his birthday and it will be both of our first time going after them, I’m used to whitetail and normally do summer sausage, pan sausage and hamburger. Would y’all do axis the same way or do steaks? Ive heard it much better eating but never had it myself, wasn’t sure if it would be similar to elk steak.

Some of the best you'll ever eat! I trim the straps, (fillet) very good, rub with olive oil, season with your favorite spice and flame cook rare to med. rare.

We make Axis same way as any other lean game meat and it is very good. A real mild flavor, hard to explain but better than deer or elk to me.

Summer Sausage, Pan Sausage & Hamburger. Not much for steaks. Not to say steaks are no good. I just don’t eat steaks of any kind.

Cut all the steaks you want then ground the rest. Backstraps I cut 1 inch, wrap with bacon and grill.

I like to cut the backstrap into about 6" pieces and grill to about 129°, serve it with sauteed mushrooms cooked in a butter wine sauce.

We make all the steak meat we can, tenderize it. (teeth dull and short). Axis bites aka bacon wrapped pieces of tenderized steak cooked over wood coals. The balance is ground meat for chili, tacos and jerky.

I cut every roast out that I can and freeze them whole, cut into steaks or cook as roasts when the time comes. I only grind all of the scraps and pieces that arent good for anything else. When I do grind, I mix it 60/40 with beef brisket to give it some fat and to make it go a little farther.
