She was tickled pink all those years ago (25+) when I had my wife ask for her recipe. She dictated over the phone while wife wrote it down. It was a cold rainy weekend and it just popped into my head. I made it that same day.

First, we have the veggies to sauté -

Let’s get started...

I’ll be doing a little substituting along the way. In this step I sub sautéed red bell for pimento. Don’t have any pimento in stock.

A stick of butter splashed w olive oil. This stock pot has a nice thick bottom so I’m using it to sauté veggies instead of cast iron.

Once this is done, you just add the rest of the ingredients season and simmer. In this step I sub tomato sauce plus Rotel for tomato soup, velveeta for sharp cheddar, and add a can of mushrooms. I also boil a whole chicken with celery, onion and carrot to get my own broth.

Now just stir and simmer, season to taste.

Aunt Lynn would add spaghetti to the sauce and serve casserole style. We serve it over spaghetti until it’s leftovers, then mix it. It freezes well without the spaghetti mixed in.

As I was eating a bowl of it, and it is awesome, I realized that sliced black olives would work well in it. Maybe next time.

It’s a mild chili based tomato cheese sauce. I dunno if rice would work well.

I bet that was way good food

My wife version is spaghetti noodles, chicken, cream of chicken soup sometimes Water Crest. Sharp Cheddar Cheese inside and on top and dried onions on top.

That looks great. The chicken spagetti that my Mom would make was one of the most delicious meals that I have ever had. Even BP would have liked it.

That’s tasteless chicken to me. It’s simple to boil and debone a chicken, and with salt, pepper, onion, celery, carrot, you’ll have better tasting chicken and great broth.

I like rabbit spaghetti too, spicy. Shoot a few cottontails, then boil & debone like you would a chicken.

When I was in college, my grandmother would make meals for me to take back to school with me. She would freeze them. One regular was chicken spaghetti. My grandmother was a product of the depression/ranch life as a kid. She used everything. I invited my girlfriend (wife now) over for dinner one night and pulled out the chicken spaghetti. My wife got the heart in her plate. She's had nightmare ever since. I'm not a fan of chicken hearts, but I will just put them to the side and keep eating. My wife has been traumatized ever since.
