.....nothing beats a real stick smoker. IMO We agree, but if you don’t have the time or interest to learn your stick smoker just get a BGE or pellet The stick smoker is a completely different game but best taste I'd like to try an electric model so I can cook over night and sleep at the same time. It was a huge advantage.
I just turned it on . I was looking bird dogs in the butt this morning.

Another vote for the traeger. I won’t go back to a traditional wood smoker unless I build something huge. Pellet smoker has consistency that is amazing.

Only other smoker I’ve used is an ugly drum smoker I built out of a 55 gallon drum but picked up a masterbuilt dual fuel smoker for $100 for smoker, cover, and propane tank. I’ve only done ribs super bowl weekend and a pork butt today and it has done great. Im very happy with it but I don’t use it as much as some of you guys probably do.

If you are going to go with a pellet smoker read all the reviews and buy a Rec Tec .

Just to make sure that it is done thoroughly, I go both ways.

I have never had meat cooked from a pellet or BGE so I have no clue how to compare, they certainly would make it easier. I have two stick smokers an enjoy them, they are a labor of love though!
Seems like all or most all of the renowned BBQ restaurants and cooks use real wood, not sure if that is because that is the only way to cook enough meat quick enough or it just has better flavor, I am guessing both!

Another "buy what I have, cuz its the BEST" thread
1. I love stick cookers as long as somebody else has to F with it. I'll show up to eat. to old for that chit.
2. I'm too stupid to figure out Digi-Q, BGE, AIDS, STD'S, UDS,
Love my 26" Webber Kettle, its EZ and cooks everything fine.

There are car guys, gun guys, but I'm a grill guy. I usually buy one or a couple cook on them for a year or two and then sell them for another one.
Current Lineup
UDS Char Griller Akorn Weber kettle Rec Tec 680
UDS (built mine for $100) hands down cooks the best brisket, easy to use so once it's dialed in temps stay put for hours. I also have a pitmaster IQ that can connect it to that will keep temps more reliable than your oven.
Rec Tec ($1,200) is awesome as I can cook a 14 hour brisket from my iPhone. Pellet grills just don't give the smoke flavor you get from wood or charcoal. I have found on longer cooks if you smoke at 180 until the meat gets to about 180 then bump up to a higher temp it gets close. Pellet grills are fantastic for chicken and Prime Rib.
The Akorn is very similar to a Big Green Egg but only has a lifespan of about 5 years and only $300. Yesterday I did a brisket on mine and with little effort it stayed around 275 the entire cook. I can also connect it to the pitmaster IQ I mentioned above for long cooks. This thing is also awesome for all sorts of grilling and pizza's, probably the grill I use the most.
Weber Kettle has tons of attachments to give it versatility. My current favorite attachment is a Gabby's Grill which turns it into a Santa Maria, also has the slow and sear for smoking.
While I love my grills I'm thinking of selling them all (except for the weber kettle) and getting a Kamado Joe and a Pitboss 580 Pro Series and play with those for a bit.
I would love to get a stick burner, but if I do I want a nice one and those start at 2K. I just don't cook enough brisket and ribs to justify the cost though.

Get a Traeger pellet smoker and never look back. I could do a better job in my microwave Then you aint doing it right

Stick burner all the way. This is mine, absolutely love it. I built a custom PID controller with powerful CPU fans that mount to the firebox on each side, and they control the fire. Cost less than $100 for the PID controller and fans and it holds the temp in this 350 gallon smoker for hours. All I have to do is add a split or two every 2-3 hours.

Get a Traeger pellet smoker and never look back. I could do a better job in my microwave Then you aint doing it right I tried every pellet I could find and even with it on max, it wouldn’t produce a smoke that was visible or detectable by smell. Meat came out like it was cooked in the oven

My Brother in law has a traeger and he loves it. I tried using it once, and didn't like it at all. Stick and charcoal only for me. For what it is worth, He and I both agree that my brisket is better.

Get a traditional offset smoker. I don't know why everyone has the idea that they are so hard to use. If it needs to be hotter you add more wood, if it needs to be colder you choke it down. Plus it is way more satisfying to pull a perfect brisket out of a big steel firebox using wood that you chopped yourself rather than a glorified oven with sawdust-infused rabbit turds.

Big Green Egg, or a copy. They are amazing. I just got rid of my offset smoker and it was good, but I knew I would never use it again after the “Kamado”.
Best brisket I have ever made and I have been smoking briskets, ribs, turkey legs for over 30 years.
Trust me on this.

Trust me on this. How labor intensive is it smoking ribs or a brisket on a ceramic type cooker?

I like a stick burner because starting a fire is part of the fun. I would have a hard time getting excited about firing up my pellet smoker, but that is just me.
