First, buy yourself a meat saw so you can finally cut your own frozen bone in deer steaks, ribs, bone in pork chops etc the easy way. Since you’re working on the road, have it delivered to the RV Park where you’re currently located and put it together. Pull frozen hind quarters from the chest freezer that you also squeezed into your 35’ camper, and start cutting meat. I should have took pics of the cutting but oh well. I’m sure I had several neighbors and folks walking their dogs that thought what in the redneck hell is going on here? I just smiled back, gotta do what you’ve gotta do. Sliced my steaks 1/2” thick, vacuum sealed and ready to go.

In this deer steak you will see a slice of gland imbedded in a layer of fat toward the middle. I've mentioned this gland many times over the years on here, it needs to come out. If grinding the meat, it's not really important to remove on does/young bucks/sows/young boars but I've learned that it is important to remove on older bucks and older boar hogs. Plenty of folks have said, "Man, I did everything right on that pig keeping the meat clean etc and it smells like dirty socks when I cook that sausage in the house. It tastes fine, but it smells during cooking". This is why folks, most of the time. Once I started removing this gland on older animals I never had another issue with smell. It's not that hard to remove, kinda like other things in life once you find where that spot is located the first time it gets easier & easier to do.

That’s nice to know. Now I’m glad I just debone my meat and work with whole muscles. That gland was cooked for dog bites.

Made a little brine. 3 cups water, 1 tbs sugar, 1 tbs salt, 1/2 tbs black pepper, 1/2 tbs Magic Dust, 6 dried cayenne peppers. Gonna hang out in the ice box for a while. Life is good...

Decided to whip up some black beans just using what I have on hand, don’t feel like going to the store. I don’t have onions but oh well. Have a pack of deer hocks sliced on my new saw, some store bought andouille, and frijoles negras. Love me some negras....hmn.

Deer hocks are seasoned and ready to join the party. Andoille getting browned in the Dutch Oven. Hocks & sausage ready, now in with the japs, black beans, & beef stock. Missing them onions.

I've been wanting a saw for a long time, had planned on buying a good commercial grade saw new or used but they are expensive. Finally started looking at cheap saws and reading tons of reviews. For the occasional user like me, I decided on this one. Bought it off of Amazon for $330 new. Beats the heck out of $4-8k. It came with the top cover a little bent, but it works just fine. Cut through frozen hind quarters with ease. I knew going into it I'd have to baby it and take it slow, as it's not a "real" commercial model but so far so good. It's a PITA to clean though, have to disassemble the whole thing to clean it. A little more difficult to do in an RV Park with no high pressure water or an air compressor (gotta be quiet), but it's doable. Hard to beat for the price, and it fits in the forward storage compartment of my camper.

No clue how much $$$ you are making now or how much you like your job, you would probably make a killing opening a restaurant Thank you Sir, but I don't do well with people that like to complain and there are a lot of them out there in the public LOL. Been in the oil & gas field for a long time and don't like whiners. I'd rather cook for groups of like minded people, family & friends. Thank you for your compliment though Sir.

Lol ive seen enough to know I would pretty much eat anything skinner turned out!
I gotta say the first thing that came to my mind when I saw that picture of the saw in your travel trailer was oh boy bet that's gonna be fun to wash! Can you say outdoor shower here I come lol.
