I was thinking of firing up the smoker today or tomorrow

Wife and kids are tired of ribs/pork loins

So I was thinking of doing chicken

If you have some good recipes, send em if you don’t mind

What rubs, sauce, etc...

Or really any meats besides brisket I will take

I may give it a go, I’d like to smoke some legs or breast

But use another kind of rub and sauce

I’ve always used Adkins and Head Country

Everyone’s gettin worn out on my cooking. Was looking to change it up

To make good chicken you need a good brine. Make a salty sweet brine and soak chicken in fridge overnight. Then a sweet rub and smoke. Good chicken.

I’m usually too lazy to brine chickens when I smoke or roast them...or super lazy and just buy the already roasted ones from Costco. (Hard to beat for $4.99).

I’ve brined turkeys before with good results. Might have to try it on a yardbird sometime.

Cilantro Lime seasoning from Sams. Soak in Teriyaki and lime juice for a couple hours. (I add a shot or 2 of tequila to mine.) Then add seasoning. That is what I am doing today.

Jerk chicken is great but too difficult to make for me. I've only had it out. I'm making chicken and rice tonight. It will make a half dozen meals. I start with a whole stick of butter and sliced mushrooms and end with a pinch of cayenne.

Rub I make, no measurement needed. Garlic powder, salt, pepper, onion powder, cumin, paprika, brown sugar, decreasing amounts in that order.

Go to Sam’s or wherever and get skinless chicken thighs. Get a cutting board and lay them out and carefully trim off the excess fat. On the underside you will see a kind of vein like fat-trim it out. Wash, soak overnight in 30 minute teriyaki marinade. Any brand, I do Lowery’s. Get coals and mesquite wood up hot and to glowing coals. Put meat above fire, watching close and turning to get char on meat. You can’t go away. Move meat 8” away from fire and offset cook. A step to make before moving meat off fire is to coat in butter; then wait on meat to finish. Test for doneness and eat up. It will be so tender.

Well, I wish I would have looked here before I just went to the store

I ended up on a whim going with beef ribs, I’ve never ate or cooked beef ribs before

It’s always been pork.

Some of those chicken recipes do sound great. Next time I will try it

I’m gonna smoke these ribs in the morning

I did a couple chickens last weekend. I buy the HEB Natural chickens, got 2 that were 5 lbs apiece. Cut the chickens in half, remove giblets and rinse. Peel the skin back, liberaly apply your favorite rub, I like Kenny’s. Pull skin back over meat and secure with toothpicks. Cover outside of chickens with plenty of rub. Put on smoker for 1.5- 2 hours at 225-250°. Pull chickens off and wrap tight in heavy duty foil. You could even put some sauce on before sealing foil. Put back in smoker for another hour. They will be ready after that hour, and will be falling off the bone.

Take a whole bird and coat or rub whatever seasoning you like, then use a half bottle of Tony Chachere's Butter and Jalapeno injectable marinade and let sit over night in the fridge, then put on over coals.

They were ok, honestly

I had my nephews over while the women went out for diner, pedis, all that

So I watched kids, made sides, fed kids, cleaned up after kids, blah/blah

I really think I can improve on these if I have full consentration.

Beef ribs as like any meat I guess but maybe more so beef ribs need a good thick rub.

Those have been in the fridge since about 2-3pm

Anyway, I want to get better

I used Head Country but I didn’t realize I only had a small amount left bang

I’ve heard good things about this “kosmos” rub

I would like to give it a good dosing next time

They look horrible in that pic, LOL but the taste was ok and tenderness I’d say was good

I haven’t done any yet. Were those plate ribs? What was the final temp when pulled?

I believe my final temp at pull was around 175°

Like I said, I wouldn’t document this as the way it should be done

But I held down the fort and cooked them

I’m thinking the beef ribs...with some care could be good
