Like a lot of folks on here - we tend to experiment with recipes. I just threw this together this afternoon with leftovers and some imagination. Turned out great!

1 box Jiffy cornbread mix
1/3 cup of water and a few tablespoons of sour cream. Mix well (didn't have milk so water/sour cream worked out)
Add in one can of diced Hot hatch green chiles - mix well
Add in 2 beaten eggs and mix
Add 1 cup of Asadero grated cheese - of course mix well
Set aside batter mix

Cook 4 bacon strips in your cast iron skillet to well done (bacon bits) and set aside

I had left over venison and wild hog sausage mix (pre-cooked) in the fridge) Added about a cup and half of the meat to the batter mix while bacon was finishing.

Mixture into a 8" square baking pan - lined with foil. Brushed a bit of bacon grease on the bottom and sides of the foil, and ladled in and leveled the mixture.

Cooked at 350* for 20 minutes and topped with bacon bits so they would settle just a bit. Back in oven for 10 minutes or so and then removed and topped with more asadero and let rest and finish firming up. Came out very moist but firm and full of meat, peppers and cheese.

All in all it took about 15 minutes of prep and 30 minutes of cooking. Breakfast, Lunch or Dinner!

You had me right up to the baking pan. Man, you’ve got a hot skillet rocking bacon grease needing some love. In my village we fry johnnycakes in bacon grease. AAMOF, we try to keep a quart jar of batter in the fridge. Corncakes in 3,2,1...

You don’t need a cover. Just put a big spoonful of batter in the grease and wait for bubbles, then flip.

Heck yeh! We call that stuffed cornbread, love it. I like to quarter up smoked sausage & fry till good and brown - set aside. Caramilize an onion in butter, then sautee some japs. Throw all that in the mix and top with Mexican cheese at the end. Also like making crawfish stuffed cornbread with left overs this time of year.

Sounds great, as mentioned that cast iron skillet would have made a great baking vessel.
