AKA red pork stew/pork & red gravy/chili colorado. You can make green or red. Tonight it’s red.

The chili’s. Chile Ancho, Chili Guajillo, Chile Arbol, and hand picked native Chile Tepins (yes they are pequins).

Brown the seasoned pork.

Made the chile colorado, with the special ingredient on the side about to be crushed and added in.

Onions, jalapenos, & butter are almost there. Then gonna add a little flour and make a small roux.

Now everybody is hanging out together. Gonna simmer for a few hours until the meat is fork tender and the gravy is thick.

You need to warn people when you are cooking tortillas. The night you made fajitas, I may have been a little drunk, when I made mine I put everything into the uncooked tortillas. I couldn’t spit it out fast enough barf

You can serve it on a plate with rice, beans, tortillas & make tacos or just in a bowl. I like to make a big bowl of it and dip my corn tortillas in the gravy. I’m heating some up for breakfast now, I’ll post a pic.

No Sir, no sauce left over. Mopping it all up with tortillas lol. Love this stuff.

You could add more pork, beef, or deer chunks later if you wanted to.

Thanks. Yes, roasted then put in a bowl. Boiled some water and covered the chilis with hot water for 20-30 minutes. Then into the blender and ran through a strainer to remove the pulp.
