I have never eaten theses but I see where they use them often at restaurants on Triple D and I wanted to try them. This is my first try at making them so I will find out in a few if they turn out ok. Has anyone made them and what do you put them on...… And another thing …….. I think they should be called purple onions (cabbage too)

I've called them purple as well as red onions.

The Mexican food joints around here serve them with their grilled chicken,re fried beans, and corn tortillas.
They are really good.

Love them. Usually have a jar in the fridge. I eat them with ham/turkey sandwiches, chicken salad, tuna salad, stir fry dishes, grilled chicken, pulled pork sandwiches...just to name a few off the top of my head.

edit to add: I usually toss in a few whole peppercorns and a few cloves of peeled and smashed garlic, and I prefer them with distilled white vinegar instead of apple cider vinegar.

Back in the day, there was a BBQ place in Rosenberg that had pickled onion slices on the condiment bar. It was a regular stop for me.
