Steak, grilled to perfection
Pork chops, grilled, fried or just about anyway
Brisket, smoked of course though I have had some that were oven baked that were ok, not great though

good ribeye over live oak then reverse seared to medium rare
chicken fried backstrap
beef enchiladas

fried shrimp, pretty much any Cajun dish, fish (fried or pan seared) ... the list is almost endless
