Thats how long it takes to make a gumbo roux. Put 2 beers next to your stove, start with equal parts flour and oil over medium to med hi heat, open first beer and start stirring. By the time you are finished with the second beer your roux should be pretty close to chocolate colored. Granted that is a bit subjective, but for me usually is 25-30 min. Some may like it a little lighter or darker.

Was making gumbo at work today. I got busy, told my nephew to handle the roux. He says you like it close to burnt? I said yea, pretty close then toss in the trinity and after that gets soft toss the sausage in. He knows a bit about cooking and I've seen him make gravy so figured he knew what was what. I [censored] you not I go back in 10 min later and he has vegetables and sausage in already. WTF hippy? Granted we don't drink beer at work so he didn't have the proper setup but I had to explain to him the correct way and where he went wrong.

I think people that don't get roux right have 2 problems. 1st they don't understand, 2nd they get impatient. That is why the 2 beer rule makes sense, keeps you occupied and gives you a time frame............Know it - use it.

So long story short we are having chicken and sausage stew today instead of gumbo. Still pretty good, I'm just a little irritated.

LOL. If it looks burnt, but doesn't taste burnt, its ready! Interestingly, I use butter and flour for my roux. My BIL's aunt, who taught me to make roux, does it that way. I haven't found anyone else that does.

Right, its not just me then. Sometimes when I raise hell they look at me like I'm crazy. Other day I had to go back and apologize after I yelled at him for puree'ing the wrong kind of beans. Same thing, turned out fine it was just not what I had in mind. I didn't yell today, I just said "wtf are you doing?"

I use butter sometimes if I want a light roux.

I did this batch for an online cooking contest. took 4 beers, but I either drink fast or use lower heat. sure was good though.

Lol, I’m a fast drinker. It usually takes me 6-8 beers (bout an hour) to make a dark roux. Food still looks good though!

I make a butter roux when I make an etouffee.

If I am only doing a two beer time limit I'd have to go with a Karbach, traditional light beer would have to be closer to 4.................................ok 6.
