I don`t know if this would be considered a casserole or not. This is easier than going out to eat and cheaper as well. I make them the same way my mother made them when I was just a pup.

8- tortillas filled with grated cheese and chopped onions
1 can- Wolf brand chili plus 8 oz. water (don`t be a hater)
Sharp cheddar cheese grated
Chopped onions
Black olives
Chopped jalapenos (deseeded)

Cook at 400 for 30-35 minutes

Looks good except the olives. I would just eat them first since they overpower the rest imo. Throw some sour cream and avacado on that.

instead of water, cut the Wolf brand with enchilada sauce. It will change your life. I've also added some leftover beef fajita meat inside the enchiladas with the cheese and onions.

I'd take them off, I wouldn't complain. I'd just just say I am not a fan that is why I am doing what I am doing.

for the black olive haters, just eat from the middle part where they aren't located, simple!

my mom used to use Wolf brand chili if she was rushed, I think that's the only way my MIL ever made beef enchiladas, my wife would mix some ground hamburger/venison burger with the chili ... I'd definitely put a hurting on that.

Wolf brand chili does have "some kind" of meat in it...... what kind is the question.

Nope, that’s not quite a casserole. I can still see what’s in it. But I would add some beef to the enchiladas. Taco meat maybe, 407 chopped beef FTW.

Black olives are chameleons of the food world. They take on/enhance the flavor of whatever dish they’re in. Great in omlets, lasagna, salads, texmex and all by themselves. Don’t be a hater.

Taco Casa actually puts olives on their food, I rate their food to taste exactly like stadium nachos except cheaper. Same end result: a torn up gut and heat burn.
