This is a blast from the past. Take jalapeno`s and hollow out then deseed. Fill with sharp grated cheddar cheese. Wrap with chicken breast seasoned with your favorite spices. Follow up by wrapping chicken breast with bacon (seasoning optional). Cook over indirect heat on grill or smoker for about an hour.

I used to sell something similar to this when I ran a meat market . I called them Texas Armadillo Eggs.

I set them to the side of the coals. My best guess is around 300-325.

A couple of things...
1. I de-seed the jalapeño then boil,in sugar water (2 cups water/1 cup sugar) for two minutes then toss in ice bath. Tenderizes the jap and takes the bitterness out. Use whatever cheese you want.

Potato Salad

4 lbs Red potatoes (skin on)
4-6 hard boiled eggs
1/2 cup chopped green onion tops
1 1/4 cup real mayonnaise
1 1/2 tsp,celery seeds
1 1/2 tsp salt
Pepper to taste

Steam the potatoes skin on until tender (30-45 min). You can boil them but they tend to be a bit mushy. Chop the potatoes (skin on) and eggs into bite size pieces and add remaining ingredients. Mix gently until combined. (I mash about 1/3 of my potatoes but do what you want.). Add more mayo if needed. Serve warm or at room temperature. Any left, throw it in fridge...good cold as well.

I blanch mine also, never heard of sugar bath will have to try that.
