I got my new grinder and want to make some sausage with the doe meat in the freezer, so what is the right pork meat to mix it with and what ratio?

I bought 4 bottles of Fiesta brand Venison Sausage seasoning, any other spice recommendations?

Also I need to buy casings to stuff them in, where in the Dallas, Plano or Richardson area is the best place to buy them?

I like Leggs Old Plantation seasonigs and order them off Amazon these days. The #10 mix is what my family always used and what I grew up to know German sausage to be. Mom always added more sage and red pepper. Have always used hog casings also, but that is just how I was taught, don't know much about beef casings. Probably better places to get them but Cabelas usually has casings.

academy has them too. the real difference is just size. Beef casings are more for summer sausage.

I agree, but think Academy already clearance'd out their sausage making stuff for the year. I was in one the other day and it was all yellow tagged. Went into another and the only thing they had left was some jerky kits.

Stub, easy thing to do is go to Cabelas and buy one of their sausage kits -seasoning and casing in one box for 25# of sausage and they have different types - polish, italian, breakfast, etc. Go get a 7-8# pork butt or shoulder, add enough deer meat to get to 25# and you are in business. That will keep you and helper busy one afternoon or evening and give you an idea of what you want to do next time.

My bad I should have been more clear. I would like to find casings about the size of Bratwurst or a little bigger up

I personally like the 32mm - 35mm, but if you want smaller go 29mm-32mm in hog casings.

Growing up we made fresh and dry sausage. The butcher shop we got casings from would ask us if we were making fresh or dry, usually they gave us beef for fresh sausage and pork casings for dry sausage. The pork are smaller diameter and typically dry better/faster.

Last few batches of sausage I have been using some vaccume packed in salt casings from HEB, they are also sold on amazon and have a pretty darn long shelf life.

I guess I need to read up on it more, my game plan was to stuff and stick in the freeze until I was ready to cook.
My first thought was using the right kind of pork to mix it with, grind up fresh Jalapenos, Garlic, Red Pepper and whatever else sounded good and stuff them with just that.
got more research to do and hopefully more help from our THF peeps up

I get the Natural Hog Casings from Amazon, it is just convenient for me. One package does 25 lbs. on the ratio, I use 70/30 deer to pork butt. For seasoning, I sometimes just stop by Fischer’s in Muenster and tell them I’m doing 25 lbs, and buy their seasoning. I have a few good sausage recipes, but they are not any better and way less convenient.

I have tried different sausage recipes from scratch - sometimes they are pretty damn good and sometimes just ok. Seasoning mixes generally work very well, especially with a little tweaking like extra pepper or fresh jalapenos.

Take a drive up to Muenster and buy some seasonings and casing from either Hess Meats or Fischer's. Both will mix you up their blend of seasoning and sell you casings.
Buy a nice steak while you're there too. They cut to order at Hess.

Muenster is a German town and Germans know sausage.

Neighborhood butchers are becoming a rarity in the world but they have a wealth of experience and knowledge. In my experience, they enjoy their profession and like to help folks like yourself if you simply ask. They also greatly appreciate the business knowing that most folks these days choose the major chain grocery stores or mail order. Plus they tend to have crafted meats and a variety of sausages. I always get casings from local shops that make their own and like to try their varieties.

I think I will call Hirsch's meats in Plano, I had them do a basic deer process for me and bought some sausages while I was there.

Yep, lots of great little shops to get some seasoning without having to order or go prepackaged.
Make sure you ask if it has the cure mixed in ,if called for.
