When searching for poly pipe, what ID or OD do I want? 600 ft of pressure water pipe. 1/2 pipe should be good.
If ID or OD doesn't have anything to do with poly, then I just need to know what you guys would run. thanks.
Never used poly in my life.

It all depends on how many gallons per minute you want. Max flow for pipe; (Schedule 40 - all sizes are labeled for ID) 1/2" = 14 gpm 3/4" = 23 gpm 1" = 37 gpm you won't get quite this much - but close

A few questions- 1) Desired water pressure where you will use it 2) Desired GPM 3) Source pressure where you tie in
Knowing these will help to determine line size.
