It all looks dang good, I would go with a about 2/3 the size of that meat patty and use mustard instead of mayo food

Yeah I don't make them that big either. Like I said, all you have to do is make it smaller. Here is how I been making them.

My secret is "keep patties lightly packed".

This is the most important concept. As soon as a started doing this, my kids were like "Dads these are the best burgers, not sure what you changed.." What you want is freshly ground meat, or just make sure it has not been smashed.

Next lightly crumble the meat up with my your fingers. This is easily done if meat has never been smushed.

Season, just use salt and pepper.

Mix it, toss like salad, again want to keep it light...

Lightly pack paddy. You want to pack it just enough to hold it together, if you pack it more than that you are over doing it and the more you over pack it the worse...

Guy, I like your burger better than the one in the video. I season the crumbled meat then make the patty so that the seasoning is all through the meat. I also prefer to grind my own so I know what I am starting with and a one plus on using mustard. And if all possible do the cooking over a hot charcoal fire.

As said above I have seen it's best to handle the meat as little as possible, it makes for a better burger.

I prefer the cooked meat to be not thicker than one half inch thick, at most.

bigbob, That looks awesome! You need to sell that pic to Whataburger or Burger King for their advertising! That's what they show you up front, but when you order one it looks like a car ran over it! The WB is still pretty good though. The BK, well, it's edible if you're hungry....

Just pull the tooth picks out and give it a little smash with the hands. A good burger is like a good taco... by time you get enough of everything on it you want you cant close it, pick it up, or stretch your mouth big enough for a bite.

Burger looks great, but he is kind of an azz.

looks pretty good to me but I would have to squish it down to about half that thickness before trying to bite into it.

My cardiologist would have a fit over all that salt..then again, you only live once. I can see why he calls it the "F" burger.
