Haven't posted food on here in a while.... if you've never had smothered potatoes, I recommend that you try them. These are not mashed potatoes or potato soup, but just as easy to make. Takes a little longer but man...are they good. You can use bacon, tasso, or smoked sausage for your meat but I prefer a good smoked sausage. It's a meal in it's own but I prefer to serve as a side to a good steak, chicken fried backstrap, or fried fish & shrimp with some good pintos.


I'm making a small batch, so in a 4qt Dutch Oven I slice & brown a ring of smoked deer sausage. Brown that sausage.

When browned good remove the sausage, and drop in 1 chopped yellow onion and a half stick of unsalted butter.

When the onions get some good color on them, drop in 6 or so cloves of fresh minced garlic for a minute.

Then return the browned sausage to the pot & stir.

I'm using half of a 5lb sack of Golden Potatoes, peeled and cubed a little large. Drop them in and add enough chicken broth to almost cover the taters, but don't cover them. Cover with lid, turn heat down to a simmer and relax. Keep a little stir on them once in a while, don't let it burn. During the cook you are going to need some more broth, add just a little bit at a time as needed. The potatoes will start to break down forming a nice soup mixture (not potato soup though), but since you cut your potatoes a little large in the end you will have a kinda thick potato soup mixture that still has plenty of nice chunks of potatoes that will end up being thicker and better than soup. In progress.....

Bell peppers do fit right in especially the red ones, but I like them sliced fresh on the side right up against the potatoes. food
