Stopped in to eat the cattle Exchange in Canadian Texas; it was not a planned stop, but one when it is time to eat and sleep. Co-worker had heard this was good place to eat, great looking building. These not a comment on Japanese beef, but when did small town restaurant's start this tend of Akaiski, Kobe, or Waygu beef. Canadian is about 2300 people, not a large Metro city and this is a trend I have been seeing in other small Texas towns selling steaks at $20.00-$40.00 a cut of exotic beef. I like to helping business as I travel, that part of the reason small towns are able to make it. What happened to years of good old American grass feed beef, with good genetic and cowboys? At what point do you say the cost of being fancy is too much? I ordered the a soup and salad ( good food), but wondered where is American beef prices headed?
In the end I should just stay true to my ideas, I can cook just as good steak at home.

US beef market has been primarily feed beef since the 30’s, increase ever since with better refrigeration. This hippy grass fed stuff is a new deal.
20 dollars for “prepared” steak ain’t that bad.
But to answer your question Marketing 101. First con was angus, now we are on to Japanese crosses

I figure 50.00 or so for wifey and I to go eat a steak. Usually every 3-4 weeks. She cooks an excellent steak here at the house.
