The most enjoyable model I have is my 70 series colt government model in 9mm. Manufactured in 1973.
I have about 6 total and I enjoy shooting all of them. I own Colt, Kimber, S&W. 10mm 45ACP 9mm. I enjoy shooting all the calibers.
Like modern rifles today, most 1911s if manufactured to specs will shoot nicely. You got to keep them clean and maintain the mags.
Most of the differences you'll find are in the feel in your hand. Some are lighter like my S&W, some have thin grips....etc.
I don't like a heavy pistol, but I don't like the plastic feel in my hand. That's why I really like CZs. They are similar to a 1911 in that they are all metal and have more weight than the plastic guns. Just a double action if you desire.
The added weight and feel allow me a steady more consistent aim, especially firing 25+ yards. For me, that's fun shooting. I don't get a thrill from shooting 10 yards at anything.

Springfield. Depending on your use, the R.O. or "Loaded" will get you where you want to be. If you want to go a little north of 1k, get a TRP. Some of the best shooting and most reliable 1911's made for that price point.
