I’ll pour a big batch of grits in a loaf pan and chill it. Then I’ll cook slices in cast iron and bacon drippings. Good stuff.

Now this I have GOT to try! My Mom used to make an awesome meal with basically a real dark onion sauce and lil Smokey’s that were cooked pretty dark. Put that on yellow grits we always got from Louisiana and we were in Heaven!

I do the same. Brings back memories of my childhood on the farm.

The excerpts came from here. It's a number one seller.

About Where the Crawdads Sing. For years, rumors of the “Marsh Girl” have haunted Barkley Cove, a quiet town on the North Carolina coast. So in late 1969, when handsome Chase Andrews is found dead, the locals immediately suspect Kya Clark, the so-called Marsh Girl. But Kya is not what they say.

Put a couple of over easy eggs on top of a plate of grits, cut up the eggs and mix in with the grits and enjoy with bisquits and sausage .

Matter of fact, I was thinking about doing a cheesy grits and shrimp tomorrow....
