Cooked up some oryx steak, along with jalapeño and cheese venison sausage. Scalloped potatoes garnished with jalapeño pepper jelly.

Smokey Denmark’s in Austin....unfortunately their retail business got way too big and they stopped doing wild game processing. They are second to none in their venison sausage....they also made venison boudin that was amazing.

Looks great! Oryx is good stuff, Gemsbok and Scimitar is hard to beat.
