Have thought about doing this for a while, not sure how much I'll post in it. We(me mostly) cook at my office 4-5 days a week, feed 15 on average but sometimes as many as 25. My rule is if there is food here, you are welcome to it. Lunch is at 11am and if it runs out before you get here you are on your own and I don't won't to hear any bitchin about it. I'd say most of my guys are pretty happy with the arrangement. Outside of cooking we keep the kitchen stocked with essentials and ice cream in the freezer, etc so there is pretty much always food around. I have vendors and mechanics that stop by, not uncommon for them to grab a plate and sit in while they are here.

Yesterday was roast chicken quarters, mashed potatoes, buttered cabbage, and baked beans. Sorry no pics. Sometimes I start from scratch, sometimes it mostly comes out of cans. Just depends on whats in there to work with and how much time I have. Generally try to spend less than an hour cooking and I'll usually start at 9am and work on it off and on while I am actually working. If I get behind its done by 12:00 at the latest, if I get busy in the morning and can't make that time I'll usually not mess with it.

Today is chili, although some would argue its not chili because of the beans - and cornbread, although some would argue real cornbread doesn't have flour in it.


Chile Recipe today - it moves around on me....
5# hamburger
2# ground venison
1 large onion
8-10 cloves garlic minced
3 cans fire roasted diced tomatoes
1 jalapeno
6 beef bouillion cubes, 6 cups water
2 cans kidney beans
4 handfuls chile powder
1 heaping handful cumin
some oregano
some paprika
small handful black pepper
salt

Browned meat, added onions and garlic for a few minutes then everything else. Brought to a boil then med heat for 30 minutes. It will stay on simmer until its gone, which might not be until 5pm or later.

Cornbread
2 c corneal
2 c flour
2 Tbsp baking powder
2 cup milk
2 Tbsp black pepper
1 Tbsp Salt
1/2 c oil
2 eggs
Mix dry ingredients, then add wet ingredients

Preheat oven to 450(my oven up here cooks a little slow), stick skillet with little oil in it until just smoking then add cornbread batter and cook 30 min.


Hold on one sec for pics.

Will go ahead and start on tomorrows pulled pork tacos and beans. 9# pork butt will cook all afternoon and I'll shred or cube it depending on how tender it is before I go home. Will also soak 4# pintos overnight and have one of my early guys kick the roaster on in the morning. The meat will probably be gone tomorrow by the time we're done, but I"ll have a gallon or two of beans to freeze and use on a later day when I'm too busy to cook. I have five roasters, prefer them to the oven generally for this type work.

I like to think the cost out and try to keep it cheap mostly.

$10 ground beef
Don't figure in cost of critter
$1 in onion and garlic
$5 in the canned stuff
$2 tops in the spice
$2 tops in the cornbread

$20 total, assuming 20 guys thats about a buck a piece for home made lunch. I try to keep it $1.50/ea max. Sometimes will splurge like during Lent and I'm making seafood stuff on Fridays, sometimes its beans and crackers so way less.

I used to eat sandwiches every day for lunch until I figured out I had a gluten allergy. So now I eat tacos on corn tortillas pretty much everyday.

Chicken bacon ranch and some steak tacos with grilled Mexican street corn and bell peppers. Pretty much any left overs from night before I make into tacos lol.

5PM and enough chili for about 2 more guys, night crew will finish it off and clean up.
Pork pretty much done, will put it in the fridge tonight then shred it and season / sauce it tomorrow when I reheat.

tortillas - free, I have a connection with distribution company next door for day old type stuff.

$24 bucks toda

20 guys, $1.20 total ea.

Sunk cost isn't exactly correct term, but basically its something I salvaged from a previous meal, like a ham bone, or insignificant cost like salt, pepper, etc.
