Do you hire out? Class A CDL, clean record and at least one yr experience, come on. Had a guy that just re-retired at age 79 due to health issues so I've got no problems with people that have been around since the early A.D.'s.........

Chili dog day. Chili and dogs are leftovers from a meal I helped ramrod for the youth at Church yesterday evening. I overcooked, they under ate. This is mostly sunk cost but I'll go ahead and add it up.
4# tater tots - $5 40 hotdogs - $7.50 buns free #10 can Stagg Chili $13 - this is obviously real chili because it has mescan writing and also no beans.... 2 bags fritos $7 shredded cheese, ketchup, mustard, jp's SC
$32.50 / $1.60 ea

I feel sorry for me. Had chili dogs yesterday evening and about 4 Corona's afterward. 67 degrees in the house and I woke up sweating about 1am.

Yesterday was Rosa's Taco Tuesday Today went easy again. Echrich sausage w/ bbq sauce 5# / $10 BBQ sauce / $1 Green Salad $2.50 Mashed potatoes Free, brought in by one of the guys Baked beans. 2 28oz cans Bush's. $2 $15.00 total / $.75 / each.

Spaghetti. I can make sauce from scratch, usually up here though I buy the cheap canned stuff, add whatever I have hand to jazz it at the time. Sauce 4# homemade pig sausage - last I have from what I made last year. SC 3 cans hunts sauce - $3 2 cans tomatoes - $2 celery, bell pepper, onion - $1 2# spaghetti - $2 Salad - last of the large salad mix I started with at beginning of week $2.50 French bread with butter, cheap parmesan and garlic salt $2 $11.50 total / prob 15 max guys before its done. $.76/ea

Been kind of busy lately but I stopped by Kroger this morning. Got 25# of chicken quarters for $.50/lb and and couple pork shoulders marked down at $.79/lb. Grabbed a few other essentials also so spent $80 total, should get me through the next 4 or 5 days. I'm a bargain guy, usually check the mark down bins and stuff when I go. Baked chicken - $12.50 Stove top type stuffing - $1 Instant potatoes - $2.50 Salad - $3.50 Comes out to less than a buck a piece today.

You can tell nobody up here misses many meals, but it is healthier than eatin out everyday. Went the easy beans and rice recipe today like I posted in Roll-Tide's thread. Started by crumbling and browning 1# of Jimmy Dean hot breakfast sausage withe a couple chopped onions and bell pepper. Added 6# of sliced Echrich sausage and browned for another 20 min. Not the biggest fan of Echrich but its all right and guys up here eat the heck out of it. Puree'd a 30 oz can of pintos, added 4 14oz can of blackeye's, little bit of water and then cajun salt, black pepper, and a little garlic powder. Simmered 30 min Served over steamed rice. If you add the rice directly to the beans it is pretty good for the 1st hour, but then the rice starts getting pretty mushy. Onion / Bell Pepper $2 5 cans beans - $5 Jimmy Dean $3 Echrich $10 Rice $1 Little over a buck a piece.

My lunches vary from monotonous to weird. Out of the last 20 years more often than not ive had a peanut butter and jelly sandwich and that's it... gotta make up for what I eat and drink on the weekends and at dinner. Last week I ate left over bbq sausage and chicken thigh/leg quarters every day. Yesterday was 2 pieces of panko fried fish and 2 bbq drumsticks. Today was a mix bag of celery, chocolate chip cookies, leftover biscuit from breakfast this morning, and a banana.

Today I had boring Kbob's half chicken and broccoli, it came with dressing and it was well not great. I guess I just fueled my body with bland food, just boring fuel.

Slow roasted the 2 pork butts yesterday, cubed and reheated one with a can of green enchilada sauce plus some extra garlic salt, cayenne and chili powder. Other one got cubed, panned and put in the freezer. Couple large cans Goya Charro beans Spanish rice Salad. Hired my nephew a while back, and he used to work in a restaraunt so letting him help out in the kitchen when he is not helping out on the dock. Looks like I have been stuck in the same food rotation for a while. While it doesn't bother me might be time for a little change. Lent starts next week so I'll switch to Cajun gear a little. Maybe dig us some easy, good large casserole recipes also. I prob over use salad, beans and rice. Reasons to me our obvious, #1 the are all good, #2 they are all cheap, #3 beans and salad are pretty damn healthy. Rice not so much, but it sure does make a good side and filler. Pork Butt $8 Beans $3 Rice $2 Tortillas $5 Chips $2 Salsa and fixins $2 $22 / $1.10/each

She does it a little different than I would. Browns the liver pieces, then makes a gravy in the skillet, sticks the pieces back in and adds water to cover and sliced onion on top then simmers it for a while. She says thats how Grandma taught her. I told her makes more sense to soften up the onions in the roux first. Came out pretty good.
