I just wanted to share a recipe I discovered. I have been grinding up the rear hams from pigs i shoot and using it in place of ground beef. It makes some great chlli, if you haven't tryed it try it. I actually think the ground pig makes Better chilli then venison.

2 cans of ranch style beans
2 lbs of ground pig
1 can of rotell
2 packs of mccormicks chilli seasoning mix
1 cut up onion
a little garlic salt and powder

Best chilli I have Ever made

Lose the beans, use one pound ground and one pound spoon sized chunks. Lose the Rotel, use beef or bone broth instead. Lose the McCormick’s get some Pendry’s original instead. Lose the garlic powders and use several gloves of garlic (crushed, use a lot) instead. Kosher salt and fresh ground pepper to taste.

Garlic salt is for garlic toast only. Garlic powder is almost useless.

I know many folks don't put beans in their chili, but it is a way to stretch a dish and add some fiber and protein at the same time. I typically cook up some dried beans but I sometimes use canned. I also add diced tomatoes instead of Ro-Tel, but that's a personal choice. I used to use the ready-made chili seasoning however lately I've just been adding chili powder, cumin, and cayenne pepper until it tastes right. I indeed use onion and garlic, plus I've been known to throw a few other things in at times. Make it how you like it! I definitely agree that the ground, free-range pork makes for some excellent chili.

I also use it for soup, Shepard's Pie, spaghetti or lasagna, meat loaf, you name it!

You can stretch your chili I prefer not to.

Ground pork works for lots of dishes. beans do stretch the chili but there are none in my chili

Since so many people balk at putting beans in chili, I guess y’all don’t add cornbread/crackers/chips either? I don’t understand the butthurt when people say they like beans in their chili. If I wanted to eat just cooked meat I’d eat a steak!

Sorry guys...I'm not a chili purist and just like to make and eat it......not make it to please someone else's whims. I like a lot of chopped green chili in mine, along with beans and sometimes I even like to dump some hominy in it as well. Perhaps this is considered to be breaking the laws concerning chili masters...but I think "make it how you like it". Hogs can be the basis for some really good tasting chili !

FWIW, My British stalkers say that Shepard's pie is only made with sheep meat. What I've and obviously many of you cook is cottage pie. BTW sometimes try game pie. I use boiled some or all of the following, squirrel, rabbit, quail and dove. a jar of chicken gravy and frozen mixed peas and carrots. another is made with cream of shrimp soup, fish, shrimp and fake crab, peas & carrots. Obviously caver these with mashed potatoes. capt david

My great grandmother, grandmother, and mother all made chilli with beans in it.

When yal die if your fortunate enough to find your way to Heave I'll be happy if you go question and educate those fine southern women on their chilli making capabilities.

Nice, easy to use tasty lookin recipe. I agree pork makes pretty good chili. The most basic chili recipe I have seen/eaten was years ago and called "cowboy chili" by the cook, was just browned ground beef and a can of Ranch Style beans mixed together. Not ashamed that in my younger days I prob cooked it up and ate it a few times.

I have a chili recipe, but for the most part I just start cooking and add whatever I feel like - which usually includes beans. Don't need some waxed mustached tall boot wearing whoever from nowhere Texas telling me what chili is, the whole idea seems a little contrary to the idea of cooking chili itself and being a Texan in general.


Shoot. Eat. Repeat.

+1 for Beans, the more the better. Dark red Kidneys, Pintos, Black Beans you name it!
No beans = Undeveloped palate lol

SnakeOil is right I think a lot are confusing their "chili" with campbells tomato soup. HAHA
