Came back a day early from the Colorado Bend SP hunt for doe; we had a nice surprise and came across 3 groups of Aoudad the first evening of the hunt. My dad and I took 8 sheep via spot and stalk.

A lot of cleaning, and a very happy taxidermist. The park wants them removed to protect the native animals, same as hogs. They asked all the deer hunters to remove as many exotics as possible.

Cool that you're getting taxidermy work on the horns. Can you do anything with all that meat? Are they good to eat?

i've had it a few different ways and if I had to choose between eating Aoudad and an old boot, i'd pick the old boot.

I've tried 2 of the aoudad we've taken, both were pretty good. 1st was a young ewe that we prepared like cabrito and smoked over oak & pecan. It was not bad at all. 2nd time is what I will do from here on out! One of my employees took the meat, deboned, seasoned and wrapped it with cooked banana leaves, steam cooked it and made tacos and it was damn good! Its like anything else, it depends on whose cooking it.

I wouldnt eat the old rams but i had a few people take ewes at my ppace and said the meat was quite good
