Mama's chickens had been up until a week or so producing more eggs than we could handle. Decided to pickle 3 dozen with some what I call "wild onions " that grow back behind the farm house at the ranch. The onions are some of the best I've ever had in my life. Spicy in themselves and just excellent with anything specially with a grilled steak. Its been a week or so and they are pretty good. Going to give them a couple more before I start to really chow down on them.

For some reason I can't make myself eat a pickled egg. I'm probably missing out but can't do it HAHA! I'd eat a whole jar!

Seriously with the flavor in these things they take the edge off when your "Hangry" and because they are low carb they just make sense. I like to have these, jerky and mixed nuts readily available to help maintain my weight. If not I'll grab a bag of chips or can of Pringles and its then a sad thing!
