Spent a little time today developing a pork fajita sausage recipe. Somebody give it a whirl and give me some feedback Fajita Sausage Recipe: 20lbs of meat, 10lb lean & 10lb fat. 3 onions diced fine 3 sweet peppers diced fine Saute in separate pans in oil until soft, salt and pepper to taste. 6 tsp sugar 3 tbsp corn starch 6 tsp chili powder 23 tsp salt 7 tsp paprika 3 tsp chicken bullion powder 5 tsp onion powder 6 tsp garlic powder 1 tsp cayenne 2 tsp cumin 8-10 oz tomato paste Combine seasonings with tomato paste and 2-3 C water in food processor, blend until smooth. 5 jalapeños diced fine 5 lbs pepper jack high temp cheese Grind meat, add seasonings, peppers, onions, jalapeños and cheese. Let rest for 24-hours before stuffing in casings. Smoke over mesquite or hickory

I sampled something similar at a grocery store not long ago. Thought it was interesting and really tasted like a fajita taco with all the fixings.

Sounds good. I get fajita sausage made at Kubys. Use it just like fajita meat.

Sounds interesting. I may have to try it. I have 6lb of trimmings from a pig that I'll use to make a batch of hot links soon.

Sounds good. I get fajita sausage made at Kubys. Use it just like fajita meat. ..my son may have had a hand in that...he work there making sausage....
