Looking to see what brand of equipment others recommend regarding deer processing. Looking for grinder and sausage stuffer. I’ve checked the internet and see LEM, Hakka, etc

I really wanted a Weston but got an LEM Big Bite #12 3/4hp and it is a beast. I think they have 19% off on their site right now for the new year.

I'd also make sure you get a mixer as well. It really makes it easier on you.

I have the Lem big bite #32 and a gander mountain stuffer, also a Weston mixer. I like the quality of all them. I tend to look at Lem first and think they make a great product. Only thing I have ever had problems with is a game winner mixer which was rated for 25 pounds and bent the blades with 15 in it. I think the stuffer is a must. I have stuffed with a grinder and it changes the consistency of the meat in a bad way. The mixer is also a great investment. If you make jerky look at the grinder attachments they are high. I personally prefer ground jerky and use a jerky cannon. The jerky slicer can double as a tenderizer for steaks.

I do not process as much wild game as others but this is what I have:

1) Sausage Stuffer - Cabela's 5# sausage stuffer
2) Grinder - Cabela's Pro Series DC Grinder (0.5 HP)
3) Mixer - Cabela's Heavy Duty Meat Mixer

This works for me. If I processed more game, then I'd upgrade the grinder and mixer.

Agreed. I later got the 25lb mixer attachment for my LEM and it works quite well.

We have a 1.5 hp cabelas grinder, it has been great for about 15 years or more, probably closer to 20... im getting older than I think.

We have an old antique cast iron stuffer that's been going 100 years before my time through a house fire and still rolling strong.

Personally the mixers are of no use to me, they don't hold enough meat, are a pain to clean, and you can easily mix it by hand. I enjoy doing it how my grandpa taught us.

I have a LEM #8 big bite, and a LEM 5lb vertical stuffer. You will want a geared stuffer as opposed to a horn type. For a mixer, I bought a 20lb hand crank one from Cabela's. You can't mix 20lbs at a time because that would be totally full but it does well at 10lb batches.

How much sausage do you plan on making?
We do about 1200-1500 pounds of sausage a year. We have a #42 grinder (Cabelas) and a few others as back ups or to help move things along.
We also use a hydraulic stuffer (not sure of brand), that thing is awesome. But the 25 pound LEM crank one does a pretty good job and has had to come into service when the hydraulic one gave us problems.
No mixer. We alternate a cube of venison then a cube of pork as we feed the grinder, some quick hand mixing and your are done.

We have a Cabelas 1 1/2hp grinder that is probably 12 years old now and a LEM stuffer with the electric drive motor and foot controler. I am on the same page with redchevy and Simple Searcher regarding the mixer. Season your meat before you run it through the grinder. Alternate fat and lean chunks and then just slight hand mixing as it comes out to even out the fat vs. lean. if you are doing jalapeno and cheese cubes or other things that you don't want pulverized by sending through the grinder, just hand mix those in at the end.
