Well I took the plunge earlier this month to make knives full time again and had a great month. I decided to start making some kitchen knives to add to my line of knives and so far, I’ve had a good response and a few custom orders. The prior set of knives I made earlier this month, I had a satin finish on them, this batch I thought I’d add the rustic look to them. The only forging I did on these were on the edge, they since I already had the profile made.
This set, the handles are African Palm Wood Stabilized. Pinned with 5/16th Corby Bolts. The carving fork has been heat treated and tempered like the knifes to 60HRC. I'm pretty sure you can pick up a 20-pound brisket with it. I hate store bought carving forks, they are worthless, good only for flipping over steaks.

The Big Chopper is 13 in overall 7 ½. Stabilized Honduran Rosewood handle with white lingers, pinned with three 5/16 Corby Bolts.
I made one for me several years ago and love it, I Bar-B-Que several times a month. Slices good, cuts ribs with easy and knock out some chopped brisket.
