I guess it depends on what im cooking. I measure a lot when baking. For things I have made time and time again I don't do much, but seems like most things need to be tasted for salt.

Always fry a patty for sausage before we stuff to check it out.

About th same here, baking I measure everything else guess and golly. Sausage making I do fry some then add according to taste.Salt, well on a max of 800mg a day so I just do not add any, matter of fat there is no salt in the house for adding any to any dish, too tempting

I taste everything. If its a new recipe, I will measure to I know what I need to add and subtract to my taste. After I make it a few times, I don't need to measure.

as others stated, I measure on new recipes usually, taste for others. Tasting is usually to see where things are on salt and pepper levels to insure not too salty or to spicy depending on who I am cooking for. The grandkids wife and DIL don't handle spicy very well.
