I hunt around the Canton area, and this year has been a problem for me and some of the guys that hunt the properties I manage. I have used a processor in Terrell for years, and don't mind the ride back and forth now and then, but this year has not been a good one for me with them. The first deer I took them was just gutted and they said they wouldn't take any with hair on until after 5 pm. Here I set with a deer laying in the back of my truck still steaming and they could have cared less. As I am talking to them, I notice one of their guys working the back room where they do the primary work of disassembly on the deer, dropping a bloody rag on the floor. He dropped it 3 times while I was standing there, and then reached up and used it to wipe down the table where he was breaking down the meats.
I looked around the area some after this experience and found a guy up near Grand Saline that said he would guarantee you get your own deer meat back, vacuum sealed everything and all the stuff a guy wants. The only problem I have had with this guy is he doesn't seem to be available a lot of the time. The last deer I shot, I called and tried to make contact...and he never even returned my call.
I just want a reliable processor that does what they should.....does anybody know of one? I've had some folks talk about one in Prarieville, and heard of one in Emory, but don't know anything about them. There must be a good one somewhere in this area.

The most reliable processor is yourself. It isn't difficult to do on your own and you know exactly how your game was handled. I can cut, wrap and grind a deer in less than 2 1/2 hrs.

I did my own for years, but nowdays I prefer to use a professional processor. I will still grind meat occasionally for jerky or something like that, but prefer to have most of my meats done up for me. I had one guy down near Seven Points that was processing for a few years and did a good job, but he ended up with other problems and ended up having to go out of the business. I had another one just out of Canton that I tried for a while, but wasn't happy with their work. I asked for a bunch of stew meat from a doe once and they cut it all up okay....but left all the silver skin on a bunch of it. Trying to get it all cleaned up in little pieces was challenge.

Santos in Athens seems to be pretty good/reliable from our experiences.
