I have been hunting in the DFW area on public land, which can be a bit tricky. That being said, if any season opens up, no matter the species, I’m going to try my luck on it. I’m gonna ask it, do any of y’all hunt snipe, woodcocks, rails, and other birds/species that never get hunted? Or are the animals listed even worth trying for in the DFW area?

I don't think you'll find any around the DFW area, but good luck. What few woodcocks there are will mostly be found in East Texas and I think snipe and rails mostly along the coast.

plenty of snipe in dfw area around public lakes i've duck hunted.

I've hunted benbrook for snipe with mixed success year to year.
They taste better than you would think and its a fun hunt if you can
Find enough of them... Check the thick stuff around the creeks on hot afternoon's.
