Those jerky guns are the best. Down to our last 5 lbs of venison ground. Girls wanted snack sticks. These are jalepeno/cheese. 3 trays done. Pretty bueno.

Have venison, a jerky gun and a dehydrator... How did you do that as it looks awesome Double barrel on the jerky gun 2 at at time. Then 5 hours in the oven.

What temperature do you set the oven? 170 and slightly prop the door to let the moisture escape.

Do you use the regular venison hamburger for those? Seems like you are sort of cooking them instead of just drying like jerky and I wonder if the fat in regular hamburger would make a difference that way. I use a dehydrator for my jerky, but grind my own venison for that stuff so I can get every bit of fat out of it possible as I wouldn't want the fat to turn rancid on me later down the line. Those sticks really look good, and jalapeno and cheese really appeals to me as I get some summer sausage made from a processor every year with it.

Yes regular venison burger cut with about 15 percent beef fat. Oven works better imo then a dehydrator. The texture is not dry and super brittle. Some people are ok with it. I like mine to be a little more moist. The longer you have them in the oven at low temp the more moisture sucks out of them. I have done them for 8-10 hours and they were more brittle. Just your own preference I guess.
