Anybody ever done one? We are cooking a 5.5 lb beef tender Saturday but I’ve never done one. Google is a little all over the map on cooking times/temps. That is mainly what I’m looking for, how long and at what temp to cook.

Below is what I do. If I remember right, it takes about 1 1/2 - 2 hours. Good stuff

SMOKED BEEF TENDERLOIN

Buy trimmed or trim fat and silver skin

Red Raider meat steak seasoning on the tenderloin after light coat of olive oil

Wrap in thin smoked bacon

Coffee rub on outside

Smoke at 275 on top rack

Take off to rest around 135 degrees

Cover and let rest 30 minutes or so

This stuff is great. Use it on steaks or most any beef or venison.

Cooked at 250 on the smoker until internal temp reached 105. Cranked the smoker up to 375 until it hit 130 internal. Just past rare, perfect.

did one last year for christmas, i dont remember the cooking time, i went by internal temp, but I think it took about an hour and a half. bought one that was trimmed, seasoned it with kosher salt and heavy cracked black pepper. I kept the smoker at about 285, and pulled at 115-120 internal temp...I would have pulled at 110 but my folks were coming over and they like burnt steak, so I was looking for a happy medium without ruining a $100 piece of meat.

the important part is let that joker come to room temperature before putting on the smoker so it cooks even.

My father does them a few times of year, he gets out the deli slicer and cuts it up real thin, serve it with a horseradish sauce on those little costco rolls and that is an amazing little meal.
