I’ve been deboning Axis. Started making steaks today. Beautiful steaks.

Hmmm, never really tried it done right, only a small trimming tossed in the skillet and we agreed it was good meat. So today I butterflied a small steak and chicken fried it with Bolners steak seasoning on the meat and in the flour. Cooked it in hot lard about a minute on each side and pulled it to drain. Then topped off with Bolners fajita seasoning.

Oh WOW. Still rare in the middle, crispy on the outside and absolutely melts in your mouth. It’s the best CFS I’ve ever had. Wife agrees. She’s in there carving steaks and making another batch right now.

Make a beer batter, one cup flour to one 12 oz. beer, needs to be a little runny. Season the batter and meat, then lightly dust meat in flour and then in the batter, let it drip a little.
