Do you hang your animals from the front legs or rear legs to skin and quarter ?
Or do you do it on the ground or tailgate?

Kind of a personal question BIL, but generally by the legs and sometimes on the ground, depends on what and where at the time.

Always on the ground. I learned in west Texas where there were no trees to hang the deer by. Just done it that way for last 50 years.

hang it by the rear legs to gut \ skin \ quarter Depends where I'm hunting, but on my normal hunting place we do this. We weigh them with the guts still in, so just gut, skin, & quarter while its up. Head down. The place we hunt out west, we just gut right there where they lay.

I use a game hoist. Hang by the rear legs, with front legs touching the ground to hold in place. Gutting is a breeze. Legs are wide and at a comfortable level. Hanging upside down while you skin down towards the sternum gets everything going your way, which is down and out. I split the sternum with a very small, T handle Gerber saw that has a blunt end. Once the sternum is split, everything practically falls out on it's own. I cut a pull through at the anal cavity and that part is done. Cut off legs and lower onto tailgate to quarter. I grew up crawling on the ground and doing the messy, field dress, hacking at the pelvic bone, then pulling everything out by the wind pipe method.

I prefer to hang and rear legs, skin, and then gut. Hopefully the weather is cold and I can leave hanging a few days before quartering.

Hind legs on gambrel generally just cause it's universal I reckon. Years ago I worked at a processor that made some aluminum stands that you could lay a deer into and would support the legs so as they were up in the air. Basically a standing deer inverted. Worked so nice when your skinning deer for 6-8 hrs a day. Everything was waist high and lateral movement. No back pain from bending over.

I have hung them by the neck for the last 30 years. I cape down to the bottom of the neck after cutting the lower legs off. Then put a golf ball on the hair side, wrap a small diameter chain around the skin below the golf ball. Make sure the chain is tight so the golf ball can't slip through the chain. Attach the other end of the chain to my trailer hitch and drive off. The skin comes off the deer or elk like peeling a sock off your foot. This way you don't get any hair on the meat. I quit gutting a couple of years ago after watching a few youtube videos and just quarter out the deer and then remove the backstrap. At this point, I make a cut below the ribs and reach in and pull out the tenderloins. It's a quick and clean process.

Hang on gambrel by jack legs. I don't gut deer unless it's to lose some weight before a longer drag. If I'm not caping a buck to mount, I can have the hide off in just a few minutes. If it's something I'm planning to mount, I'm slower so as not to muck it up.

On our antelope hunt this year the guide did the no gut method and was really slick im going to do this on all my deer from now on. No one had blood up to their elbows was very clean. On the Wyoming G&F WEB site there is a video showing how.
