Need one for tomorrow. Cooking for a couple of city friends that have never tried venison before.

Put that neck in the crock pot with some spices and couple of bay leaves for 8 hours or so. Make some fresh tomatillo salsa and guacamole and server with corn tortillas and a side of refried beans. Ice cold barely pops to wash it down.

I'd try something different personally. Im 32 and was born and raised killing processing and eating venison and I have never had pulled venison neck.

For simple and good, crock pot it with a small can of chipotle. Great for pulled pork and chicken.

Yessr, I do like a good venison neck roast. I season mine with fajita seasoning, put in a crock pot with a little broth (beef or chicken), drop in a quartered up yellow onion/6-8 whole cloves of garlic/couple bay leaves. Cook on low 8-12 hrs or until meat falls off the bone. Remove neck and pull all of the meat, discard bones/onion/garlic/bay leaves/& most of the liquid. Add meat back to crock pot & stir in a little cumin/check for seasoning may need to add a little more fajita seasoning. I like to make a good & spicy tomatillo sauce and serve on corn torts with white onion & cilantro. The way I do necks is very similar to how I cook barbacoa. I've also just wrapped them up and put them on the pit, but not nearly as good as the crock pot IMO. I shoot most of my deer in the neck so don't get to eat many of them, but when I do they go in the crock pot. Good luck. up

Hahaha. Man if all else failed I was planning on using your Barbacoa recipe as a base to make tacos. What you said was my plan if I couldn't find anything better. That's exactly what I will be doing with this neck. Thanks a ton.

I might have had it sometime over the years but I've never heard of anything called pulled venison neck.

neck and shank are the best parts to make pulled venison from. Anything with connective tissue that needs to be broken down. I'd do it just like Skinner suggested or even use BBQ sauce for the last couple hours for a different take. Super easy and flavorful its a great way to introduce someone to venison.

You bet! If I have time tonight I'll post some pictures I had posted on here a few years ago. Oh, I also like to do shoulders the same way. Last time I brined the neck and a shoulder and then went to the crock pot. Was the best yet. I forgot to mention brining.

Skinner I made some like that in a pressure cooker and even that takes 2-3 hrs... great stuff. Tough to do anything else with those cuts but its some of the most flavorful venison you can have to.

Sorry, no more than an inch of broth. So pretty much braising it. The onions & meat will make it's own juice, you don't want too much.

Yes Sir! Man, I have STILL never used a pressure cooker lol. I'm gonna have to get one for Christmas.

made venison osso bucco few months back. I was surprised how tender they come out. I added a few other cuts that didn't have connective tissue and they came out very dry.

Sure. 1 gallon water/1 cup of salt/1 cup of sugar (I like brown sugar)/whatever aromatics that you want (I just like peppercorns). Mix until all is dissolved. Submerge meat (zip lock or whatever), and refrigerate. You can go for a few hours or overnight. Take meat out, rinse (to remove excess salt) and cook. up

I always process my own deer, which for sure takes a few hours. I use to trim the neck meat off as best possible & add it to the stack for grind. Now to save work & get a real treat, I sprinkle the whole neck down with fajita seasoning & put it on the bbq pit for a slow/low/smoke cook while I'm working. I cook the neck until the meat just shakes loose from the bone. I take the shredded meat & remove all the yellow leaders & tendons. Serve on flour tortillas. The only way to go... food

Falls apart and moist. Easy to make just takes a long time as you know. Serve mine over polenta. I'm hungry now.

I might have to try that with the shanks from this deer I've got in the freezer. Didn't save the neck.
