Lightly brown onions in olive oil. Salt, pepper, and dredge liver in flour. Remove onions, fry liver to medium-rare, medium at most. remove liver reheat onions and serve. most times with mashed, but often as tacos.

Add a can of tomato sauce and a little flour to the skillet with the onions to make gravy. Pour on top of liver and enjoy some good eating. Just my 2 cents.

My momma made fried liver once a week growing up, I hated it. She told me when I left home I didn't have to eat it any more. Left home when I was 10!!!

Liver and onions cooked in bacon fat. Depending on the amount of liver we usually cook 1/2 to 1 lb of bacon. We cut up a large onion and simmer in fat until translucient
when done put onions aside and Dredge liver in 2 cups of flour that includes 1 tbsp Onion powder, 2 tbsp Garlic powder 1 tsp salt and 1 tsp pepper. Fry liver in fat until medium rare. Over cooking makes liver dry and tough. When liver is done cooking remove from pan. Add a cup to 1 1/2 of water to the remaining flour mix thoroughly you may need to add more flour to gravy if not thickening enough . This is for the gravy add this mixture and the onions to the frying pan with the bacon fat and drippings heat and stir util it thickens . Season to taste usually makes a great gravy. We typically like rice with this meal and smother the rice and liver and onion gravy.

Chicken fried liver steaks, cream gravy with extra pepper, with mashed potatoes and pinto beans for sides. One slice of Texas style toast with a lot of real butter to clean the plate.
