You're so right, the bread is key to a great po-boy. Several of my frat brothers were from "da parish".

I'm in Houston most every week, I'll have to go try Bill's recommendation in Katy.

NOLA -> Mothers downtown, R & O's in Bucktown(Metairie).
Lafayette -> Olde Tyme Grocery makes THE best shrimp po-boy you can ever eat. Get one every time we go home.

I am with ya on Mothers in New Orleans. I have eaten there twice and had the best fried Oyster Po' boys ever.

Will have to try Po Melvins in Irving up

Second time I went there I was dead set on getting another Oyster Po Boy and saw a person with a plate of fried chicken that looked so good it might just set you free laugh But I stayed the course and got the Po Boy up
