I brined the breast filets over night in a simple brine(kosher salt, sugar,water). The next day rinse off good and pay dry. Season with salt, pepper, and garlic. Put in a ziplock bag and douse them with olive oil. Let set for a few hours and then grill only till rare, medium rare at most. Some of the best wild game I have ever tried.

Never done it but I seen Hank Shaw make some into smoked pastrimi iirc and it looked great.

get meat real clean, marinade in favorite marinade(ive used dales which is pretty salty, or any of the lawrys) over night, grill rare to medium rare but leaning towards the rare side. tastes like a high dollar steak to me. make sure to not overcook.

Salt and pepper then just grill like a steak rare to medium rare. Marinade over night is good too but not needed.
If the trigger is gold, the birds will fold.

Thanks! I tried it once years ago and liked it. Have tons of sandhill cranes at our place and plan to take a couple this year.

I like to pound em a bit flat, season em like beef fajitas and put a nice sear on em - man I wish I had some sandhill action on my place
