This is our vinaigrette.
1/3 cup olive oil
2 Tablespoons red wine vinegar
2 Tablespoons lime juice
1 teaspoon sugar
½ teaspoon salt
½ teaspoon pepper
1/4 tsp garlic powder

We use the vegetables etc., that we like and in the quantity that we want to use.
Chopped red onion, tomatoes, bell peppers, cilantro, avocado
Can each, drained, corn, and black eyed peas, black beans.

Combine all ingredients and chili in the fridge, serve with tortilla chips.

Yum!

Grew up eating what we caught and killed. We almost always kept the egg sacks and battered and deep fried them.

This is what is generally referred to as Texas caviar.

cheers

Back in the early 80's we used to limit out on Black bass on the Rio Grande behind Falcon Dam. It was incredible fishing for blacks, whites and stripers when they shut the water flow down. Isolated pools where you would have to drag the boat to. Some of the fondest memories of my childhood. We ate fried filets and eggs many, many times!

Just so everyone is clear, southern caviar is a combination of vegetables. Not fish eggs. roflmao
