I found the below recipe for a spicy chimichurri sauce. It turned out really well and is very easy to make a head of time. Goes great with a variety of meats.




Spicy Chimichurri

Spicy Chimichurri Sauce

Ingredients
2 cups packed parsley, chopped
4 cloves garlic, minced
1shallot, minced
3 tbsp dried oregano
1 tsp smoked paprika
1 tbsp red pepper flakes
½ tsp salt
½ tsp pepper
¼ cup red wine vinegar
1¼ cups extra virgin olive oil
Instructions
Combine all ingredients except the oil in a food processor and pulse until coarsely chopped. Add the olive oil and mix well with a spoon. Can be stored in an airtight container for up to 1 week in the refrigerator.

Not in the sauce itself. I served it over elk back-strap, and duck and quail breast. I usually use a horseradish sauce but this will be my replacement for a while.

Wanted to double check to make sure the sauce still went well with elk loin...it did.
