Wood coals for me ive had steaks each one of these ways and have never had one better than grilled over a bed of mesquite or pecan coals.

BGE for me. It takes a little while to learn how best to cook with it but when you do it’s so versitle. Hot and fast or reverse sear, either way they always turn out great.

Over hot mesquite coals was always my favorite, until I started cooking them in a hot cast iron skillet. Been treating myself to prime ribeyes lately. Sea Salt & fine ground pepper, heat skillet until it starts to smoke & drop steak in 5 min - flip 3 min. Then wrap in foil to rest for 5. During the rest I drop 1/2 yellow onion sliced with mushrooms, garlic cloves, and a jalapeno into hot pan & fat drippings. Cut steak easy with a plastic knife. Hard for me to go back to grilling steaks now lol.

hey Skinner i'll cook mine in cast sometimes with olive oil pretty damn hard to beat and when i do i season the hell out of them with pepper and garlic powder and it meshes with that olive oil like a mofo

The only problem I have with wood coals or charcoal for steaks is I like mine rare.....very hot fire....3 min on the first side...two on the other side....crispy on the outside and cool, tinder and juicy on the inside.....

Then I feel guilty about wasting all that good heat.....so I usually use gas for steaks (unless I'm gonna cook a bunch of other stuff) and save the other for cooking more meat or cooking longer...low and slow.....

Man that does sound good! Something about that steak cooking hot in it’s own juices...I roasted a bag of Hatch Chilis for the first time with my steak last week. Roasted in skillet and then let steam in a ziplock. Good Lord those things are good! Been missing out all this time, went really good with my steak.

Skinner funny you say that about hatch chilis, my son just did about 2 lbs of them and brought them by about 30 minutes ago. I popped a whole in my mouth. Sure did taste good and had a little kick to it. up

Did y’all peel the hatch Chile’s after roasting? That’s how we did it years ago when I spent time in New Mexico. Roast on gas grill til black, peel off skin and eat whole. Wash down with cold beer.

Cast iron smoking hot with olive oil, salt/pepper, sear on each side and then finish in an oven at 500 degrees to desired internal temp. Remove from oven, top with herb/garlic butter, cover with foil and let stand for 10 minutes.

Yes Sir really good. To me they had a buttery chili flavor. Different and good.

I started to peel them but quit. After letting them steam in the bag the skin was very tender, and I like a little char.

Natural lump charcoal with pecan chunks for me. I enjoy cooking over wood coals but takes too long to bring them up to my preferred heat...lump cooks hotter and takes less time to get there.

I use charcoal as my heat base but add wood on for flavor depending on what I'm cooking. Steaks I prefer live oak and pecan mixed.

Do this as well, but cast iron sits on gas grill top...very little kitchen clean up

Great steaks can be cooked with any of the methods listed and I love hearing some of y'alls ideas. For me, if I have the time to mess with a fire, it's a cast iron skillet over wood coals. Post oak or Mesquite. It's the best of both worlds. You get the wood smoke and still get pan seared effect from the skillet. Steak is preferably dry aged, salt and pepper, a little oil in the hot skillet. Sear for a bit, flip, let it sear then drop in butter, garlic and rosemary. flip the steak around in the juices, pull it and rest for 5-10 min.....

WillP Just a question how do you get a wood smoke flavor to your steak through a cast iron skillet?
