Cooked something last night ive never had before. Blackened redfish in lettuce wraps with Alvarado, cabbage, and some Cain’s dipping sauce. I’m not going all hippie on yal, the lettuce wraps were extra from a potluck kinda deal my wife had at work so we used them, they were pretty tasty! The leftovers I just ate for lunch in corn tortillas were better though!

I cooked a good bit of the redfish Monday night. Surprisingly it re-heats really well, I ate it for lunch in mixla (half corn half flour) tortillas with pico and cabage for two more days and to me it was as good day 3 as day 1.
