The reverse sear method using sous vide or smoker for the internal temp then sear over high heat. You can use the oven for the internal also. No smoke but I've had good results. And yes, finish both sides with grill HOT as possible.

Use a cast iron in butter , first side 6-7 minutes , flip & cook other side 4-5 minutes . Take off fry pan , check for temp between 120-140 degs . Rest five minutes then serve with baked potato and salad if preferred .

I was always a sear 1st believer too but reverse sear does work when done right. We eat medium rare and if it's not then it better err to the rare or I'll hear about it.
