Rubbed with Meat Church Holy Cow, smoked with pecan wood until 165, wrapped in peach butcher paper, then finished until 200 degrees and rested for 2 hours before slicing. Melts in your mouth and the bark is delicious! Prime brisket from Costco for the win.

looks GREAT! spot on with the process ... I have to try the peach butcher paper, my son (ZK-315) tried it on his last smoke and it was excellent.
