going to fry some tonight! fixing to tenderize them and season then maybe soak in buttermilk before flouring and frying. hard to beat good fried pork steaks!

I brine mine about 4 hours in water/salt/garlic/brown sugar. Fried is good, but on the pit with lots of Hickory is better.

Okay this is a question out of ignorance, what part of the pig do you get the steak from for I have never herd that term "Pork Steak"?

I take pork tenderloin and and slice into 1 1/2 inch medallions. Then take cleaver and pound them out to about 3/8 thickness. Dip in buttermilk and then seasoned flour and chicken fry. Pour out excess dripping and make cream gravy and mashed tators and drop biscuits. Add some green beans on the side and eat till I am miserable!!!

If you are feeling in the mood for German food, you can call that fried pork, "Schweineschnitzel." Add brown mushroom gravy for a real treat! I first had authentic German Jagerschnitzel in a small gasthaus in Bavaria while I was deployed with the 1st Infantry on a REFORGER in '86. Jagerschnitzel, with red cabbage and fried potatoes is still my go-to order in a German-themed restaurant. For a kid from the Arkansas Ozarks, it was a culinary treat!
