Have been wanting to try making deer tamales for a few years now. I decided I wanted to try a traditional pork tamale first. I made masa from scratch and a red sauce using California chilies.



Only made 2 dozen but they came out great, looking forward to trying again... with some help, it’s a handfull by yourself!

The work is made easier and a lot more fun when you have several people, and each person is doing one of the steps of making the tamales. One spreading the masa, then next adding the meat, and the third one wrapping it up. Being consistent on each step is something that happens with experience, until then don't worry about it. A cold beer also speeds things up... clap

Good job red and right on the work. Before Christmas every year for many years I helped my Meme make 30-40 dozen tamales. It was a 2 day ordeal but well worth it.

Heck yeh! Harvey screwed everything up last year, but normally my family gets together every year before Christmas and makes 50-100 dozen. I'm the meat guy. I do most of the killing/cleaning/cooking of the meat and I make the meat sauces for the mix. I hate smearing masa.

I watched my sister in laws grandma spread masa one swipe with a spoon and perfect every time. Not so with me I had to get resourceful. I got a cuttin board taped a wood paint stir stick to each side put the husk on the bottom, dollop of masa on top, then a piece of wax paper, then roll it with a rolling pin, perfect every time and thin, but a tenth the speed that old lady did it. It worked good enough but a little slow.

Yes Sir 100 dozen! It's not so bad as long as there's plenty of help, and beer! That's actually a pretty good idea on rolling the masa, I may try that. My BIL's Mom does like 20 with a spoon, to my 1 roflmao

Get one of these gadgets called a "tamale masa spreader", the pros will laugh at you, but it makes it easier. If you can half arsed do drywall mudding, you can spread masa with one of these like a pro. up
