I just made a batch...

Chopped 2 japs, 2 serrano, chunk of red bell pepper and 2 green onions
Grated extra sharp cheese and mixed together with crumbles of goat cheese (Easy with Super Shooter, Bill)
Added half a large jar of pimentos, drained
Added chopped stuff
Mixed well all ingredients and added MW to taste.

She loves it.

I'm not convinced it's fully developed yet, missing something. I'm actually thinking it needs some crumbled bacon added.

Yep and I've tried using grated cheese in the bags but doesn't work right, it's like each little piece is coated in some kind of preservative. Has to be fresh grated.

This is the truth. Nothing like homemade. My wife has told me the pre-shredded is coated with something to prevent it clumping together.

Lots of good recipes. I mix cheddar and colby jack. I don't use onions or jalapenos. I do put black pepper and some sugar in mine.

2 cups shredded cheddar cheese
8 ounces cream cheese, softened
1/2 cup mayonnaise
1/2 teaspoon garlic powder
1/4 teaspoon paprika
1/2 teaspoon onion powder
4 ounces diced pimentos, drained
1/2 teaspoon dried mustard

With an electric mixer, mix the cheddar cheese and cream cheese together. Mix for 2-3 minutes.
Add in the mayo and mix.
Add in the garlic powder, paprika, onion powder and dry mustard. Stir everything together.
Mix in the pimentos.
Refrigerate for at least 10-15 minutes before serving.

I made some last night and it was pretty good. I didn't use the habanero cheese because of having a little one eating it as well. I switched it out with gouda and just topped mine with some pickled jalapenos.
